In Sydney, a hotel in Redfern puts you in a restaurant district rather than at the foot of the Opera House. In Melbourne, the banks of the Yarra make it easy to combine a city stay with excursions. In Tasmania, Freycinet Lodge provides access to a park whose beaches can be explored on foot or by boat. Here’s how to choose these three bases and allow enough time for each, with properties already available to book and five complementary activities.

Three bases, three different paces

Sydney is a good choice for a first taste of Australia combining city life, architecture and scenery. You can spend a morning at the harbor, return to your neighborhood for lunch and plan a day in the Blue Mountains. For a four-night stay, we would prioritize just one major excursion: it leaves time to recover from the flight and explore the city without turning every morning into a group departure.

Melbourne is a better fit for travelers who want to make restaurants, neighborhoods and tastings a bigger part of the trip. Three or four nights provide a reasonable base for the city and one outing: Phillip Island for the penguins, or the Yarra Valley for its vineyards. With five nights, both become possible while still leaving time for city days. The main difference is timing: watching the penguins means an evening outing and a late return.

Freycinet calls for a different kind of planning. On Tasmania’s east coast, the accommodation serves as a base for walks, coves and time on the water. We would recommend three nights if a cruise and a hike are important parts of your itinerary. This gives you room to spread out the exertion and have several days on site if wind or rain disrupts an outing.

These durations are recommendations for pacing. You can choose just two bases and prioritize the experiences that motivate your trip. A stay focused on Sydney and Tasmania will already be varied; Melbourne deserves a proper stop rather than a night added between flights.

Openings announced for 2026

Choosing a hotel starts with its address and booking conditions. A project announcement offers less certainty than a property with described rooms, a reachable front desk and availability for your dates. For newer hotels, also check which amenities will actually be accessible during your stay: the restaurant, pool, spa or family areas may each have different conditions.

The EVE in Sydney has offered stays since February 2025. In Melbourne, the 1 Hotel website describes its rooms, dining and wellness spaces. Freycinet Lodge is included here for its location in the park and its cabins and pavilions; we are not presenting it as a 2026 opening.

The InterContinental Barossa Resort & Spa illustrates why timing matters. In its March 19, 2025 announcement, IHG said the opening was planned for 2028, subject to approvals. This project therefore cannot serve as the basis for a hotel stay in 2026. For this selection, it is better to compare the three available properties below against your itinerary, rather than book a flight around a future construction project.

The EVE and Sydney’s neighborhoods

The EVE is located at 8 Baptist Street, in Redfern, in the area between Redfern and Surry Hills. Choosing this address supports a neighbourhood-focused stay, with restaurants, shops and places to go out around Wunderlich Lane. The hotel’s website features Olympus for dining and a rooftop pool. You will be staying away from the waterfront at Circular Quay; trips to the harbour will be part of your itinerary.

This location suits those who want to go out for dinner near their room after a day of sightseeing. It also makes it possible to spend some of your stay exploring the neighbourhood itself, rather than always returning to the harbour’s landmarks. For a first day after a long-haul flight, a local walk and a nearby meal make for a more flexible plan than a morning excursion booked several months in advance.

When comparing rooms, start with how you plan to use them. A larger category makes sense if you expect to spend time at the hotel; if you will be out almost all day, the location and cancellation terms may matter more. Confirm the bed configuration, arrangements for children and any accessibility needs for the exact category you choose.

The hotel’s address should also guide your activity bookings. A tour advertised as departing “from Sydney” may leave from a central meeting point. Before booking an outing, check where that meeting point is and plan your journey from Baptist Street, especially when you need to arrive early in the morning.

The Opera House and the Blue Mountains

A guided tour of the Opera House makes for a short appointment in the middle of a free day by the harbour. The selected product lasts one hour and specifies an English-speaking guide. The Opera House’s official website also offers tours in French: if French is essential, explicitly select the corresponding tour and time slot. The tour ticket covers the building; attending a performance requires a separate booking.

The standard tour involves many stairs, and the route depends on which rooms are in use. Visitors with mobility needs can enquire about the accessible tour offered by the Opera House. Arrive early at the reception point shown on your booking, then leave some free time around the harbour: it would be a shame to reduce this part of Sydney to a quick stop between two scheduled activities.

For a full day out of the city, the Blue Mountains excursion combines several stops. The selected product includes Scenic World and a return to Circular Quay via the Parramatta River. The guide provides commentary in English. The package option determines details such as lunch and the arrangements for visiting the wildlife park; review the options before paying.

This outing suits those who prefer to leave transport and the sequence of visits to an operator. It takes about ten hours, with set meeting points in the city rather than guaranteed pickup at The EVE. Bring an extra layer and rain protection. The valleys may be shrouded in cloud, and the stops may change depending on conditions; schedule this excursion after your first night of recovery.

1 Hotel on the Yarra

In Melbourne, 1 Hotel is located at 9 Maritime Place, on the Yarra. The river provides a simple landmark for planning walks and trips back to the hotel. The property offers city-facing and river-facing rooms, an indoor pool, the Bamford spa and the restaurant From Here by Mike. So it is worth choosing between a city view and a water view when selecting your room category.

The hotel has an identity built around materials, greenery and an environmental approach described by the operator. For travellers, the criteria that are easiest to compare remain concrete: the room, included amenities, access to facilities and the rate’s terms. A package with breakfast may be useful if you plan to eat at the hotel; on days with early departures, check whether the breakfast hours work for you.

We would set aside at least two days in Melbourne without a long excursion. One lets you explore the city centre and the banks of the Yarra; the other can be devoted to the neighbourhoods and meals that interest you. The hotel restaurant is an option for a quiet evening, without requiring you to eat all your meals there.

For guided outings, compare the departure point with the address on Maritime Place. The hotels included on pickup lists vary by product. The Yarra Valley tour selected here operates from a central meeting point, while the Phillip Island excursion lists a selection of hotels it serves. Accommodation and these activities are booked separately.

Melbourne and the Yarra from Rialto, in November 2008: a historical documentary view of the city centre, unrelated to the view from a room at 1 Hotel.

The penguins of Phillip Island

At Phillip Island, little penguins make their way back to their burrows at sunset. The site’s operator says this can be observed year-round and requires advance booking. The timing varies by season; plan the day around this late-evening event, bringing warm clothing and wind protection for the wait near the coast.

The selected excursion from Melbourne includes admission to Moonlit Sanctuary and general admission to the Penguin Parade. The guide speaks English; French audio and written materials are available through the operator’s app. Download them before setting off if you want to use them. Meals are not included, and the return to Melbourne may be late, depending on the season and how the tour unfolds.

Organised transport has a specific advantage here: it provides the return journey after the parade. The Phillip Island website states that there is no public bus back to Melbourne after the viewing. If you rent a car, you would have to make that night-time drive yourself; on a guided day trip, you return with the group.

General admission corresponds to a specific ticket type: premium areas require other tickets or options. Check for any access changes due to construction, and respect the ban on taking photographs and filming during the parade. A free morning in Melbourne the next day will be more comfortable than another very early start.

Yarra Valley tastings

The Yarra Valley offers another day trip from Melbourne, focused on wine and tastings. The selected product lasts about eight hours, with an English-speaking guide and a meeting point near the Ian Potter Centre on Flinders Street. It includes several wine tastings and a chocolate tasting. This option lets you visit wineries without driving after drinking.

Read the details of what is included rather than relying on the marketing title alone. Lunch is at your own expense; some spirit tastings may cost extra. Allow for lunch in your day-trip budget, and mention any dietary needs before booking. If your main aim is to learn more about a particular grape variety or meet a specific winery, compare the advertised itinerary with what you have in mind.

On a short stay, we would choose between the Yarra Valley and Phillip Island based on your priority: tastings and wine country on one hand, wildlife and dusk viewing on the other. If you include both on a longer stay, fit in a day in the city between them. You will get more out of Melbourne than if you string together two excursions and an air transfer.

Freycinet Lodge and Great Oyster Bay

On Tasmania’s east coast, Freycinet Lodge is located within the national park, facing Great Oyster Bay and the Hazards mountains. Its website lists several accommodation categories, including cabins, Coastal Pavilions, and family configurations. This variety matters more than a room name: compare capacity, room layouts, and the view that is actually promised.

Staying in the park puts you closer to walks and scenery, but you still need to plan your transportation. The parks service estimates the drive from Hobart or Launceston at around two and a half to three hours. We would set aside part of the day for this transfer and any stops, and arrive in daylight. The park authority recommends avoiding nighttime travel in reserves because of wildlife on the roads.

Great Oyster Bay and Wineglass Bay are two distinct places. A room overlooking the former does not spare you the walk or boat trip needed to discover the latter. This distinction helps you choose accommodation for its actual setting, without imagining that every room has direct access to a beach.

For a three-night stay, a simple plan is to set aside one day for walking and one for a cruise, depending on the weather. The hotel offers several dining options; check their hours during your stay and bring water and something to eat for outings in the park.

Wineglass Bay from its lookout: a bay distinct from Great Oyster Bay, which Freycinet Lodge faces.

Wineglass Bay on foot or by boat

The Wineglass Bay lookout is a first option for appreciating the shape of the bay. The parks service lists the walk as 2.6 kilometres return and one to one and a half hours, on a Grade 3 track. Continuing down to the beach makes for a longer outing: around six kilometres return and two and a half to three and a half hours. These times help you plan the day; they vary with your pace and breaks.

Cape Tourville offers a shorter walk, listed as 600 metres and twenty minutes. For more challenging routes, the granite and gravel surfaces call for suitable footwear. Check park alerts, bring water, and choose a walk that suits your group’s abilities. The beaches are unpatrolled: choosing a hike is not an endorsement of the swimming conditions.

The selected cruise departs from Coles Bay and lasts around four and a half hours. It follows the Freycinet coastline towards Wineglass Bay, with commentary in English; lunch depends on the option selected. You need to make your own way to the departure point; no hotel transfer is included. This trip lets you see the coast from the water and complements the view from the lookout.

Book the cruise for a day devoted entirely to Freycinet, then confirm the check-in instructions. Wind and sea conditions may change the itinerary, and wildlife sightings depend on what is encountered that day. If you have accessibility requirements, ask about the exact boarding arrangements before choosing your option.

Timing and budget

To combine Sydney, Melbourne, and Tasmania’s east coast, we would favour October to April, bearing in mind that December to February is the southern summer. This is a route-planning preference, not a guarantee of good weather. Temperatures differ between the cities and Tasmania; even on a summer trip, warm layers and a waterproof jacket are useful at sea and in the evenings.

A two-to-three-week stay allows you to make room for all three bases, provided you set aside time for transfers. If you have fewer days, choose two stops. For each domestic flight, allow time for getting to the airport, check-in, baggage, and the onward journey after landing before scheduling a paid activity. For Tasmania, also arrange a car or transfer to Coles Bay.

Compare the total cost of the trip: flights, baggage, rooms, meals, transport, park access, and excursions. Check whether the hotel rate includes breakfast, parking, and the services you are interested in. A more expensive room may suit a particular need, but it should still fit with the activities you want to pay for outside the hotel.

The activity cards bring together the commercial details of the main offers. Check the date, option, currency, and traveller details before paying. Finally, check with Australia’s Department of Home Affairs for the requirements applicable to your passport, and leave a buffer between obtaining any necessary authorisations and making non-refundable commitments.

FAQ

Which recently opened hotels should you choose for a first trip to Australia?

The EVE in Sydney and 1 Hotel in Melbourne offer two different urban starting points: a restaurant district in Redfern for the first, and the banks of the Yarra for the second. Compare their locations with your planned outings and excursion meeting points. Freycinet Lodge then provides a nature stop; it is selected for its location in the park, not presented as a 2026 opening.

Will the InterContinental Barossa open in 2026?

The official IHG announcement we consulted says it is scheduled to open in 2028, subject to approvals. It therefore does not confirm a 2026 opening. For an upcoming trip, choose a property that is actually accepting bookings for your dates and check its stay conditions, rather than building your itinerary around this project.

How many nights should you plan for the three bases?

We suggest four nights in Sydney, three to five in Melbourne, and three at Freycinet, adjusted to fit the rest of the trip and your flights. These stays leave room for independent sightseeing and excursions. Transfers need their own time; on a shorter trip, two well-explored bases will be more comfortable than three quick stops.

Can you make this trip without a car?

Sydney and Melbourne can serve as bases for getting around the cities and taking guided excursions. For Freycinet, you need to arrange transport to Coles Bay and then local travel. The park lists transport and tour options; check whether they work with your accommodation and schedule. It is worth comparing a rental car if you want to explore Tasmania independently.

Are the suggested excursions available in French?

The selected listings specify English-speaking guides. For Phillip Island, the operator also offers French audio and written materials through its app. The Opera also sells French-language tours on its official website: explicitly select French if you need it. The language displayed on a booking page does not determine the guide’s language.

Do you have to walk to see Wineglass Bay?

The lookout is reached by a walk listed as taking one to one and a half hours return. Reaching the beach on foot takes more time and effort. The cruise from Coles Bay offers a maritime view of the coastline and bay; choose it according to your interest in being on the water, the conditions that day, and your boarding requirements.

Do the hotels include the activities in this selection?

The five activities are presented as separate bookings from the hotels. Some have a central meeting point, while others offer a limited list of pickup locations. Before paying, check the departure point, included transport, meals, and selected option. Do not assume that a departure “from Sydney” or “from Melbourne” includes a transfer from your room.

Which season should you choose for Sydney, Melbourne, and Freycinet?

October to April is our preference for this itinerary in the southeast and Tasmania. December to February is the southern summer. Conditions remain variable, especially on the coasts and at sea: check local forecasts and park alerts, then adjust your walks and boat trips rather than applying a single climate calendar to all of Australia.
